InterContinental Sydney Double Bay has quickly made a name for itself, providing unique experiences, lavish spaces and the ultimate in boutique luxury.

The hotel’s Stillery bar is a contemporary bar and lounge with arched windows, bespoke furnishings and a marble bar stocked with one of the largest range of gins in Australia. It’s also home to a unique high tea unlike any other in Australia.

Allow us to introduce ‘High Martini’, a twist on the traditional high tea, with blue and gold tiered stands of petite housemade sweets and savouries, matched to martinis. It’s the perfect way to celebrate any special occasion, particularly a bridal shower, hens celebration or engagement.

The experience has been developed by Stillery’s talented bartenders and Executive Chef Julien Pouteau, to ensure each martini matches each high tea tier perfectly, drawing from Stillery’s collection of more than 70 gins.

“To begin the High Martini experience, we serve a cucumber and gin martini,” says Pouteau.

“It’s a light and fresh martini that awakens the palate. In keeping with the traditional high tea structure, we match this with savoury delights like a serrano ham and olive baguette, smoked trout on a brioche bun, or cucumber sandwich on rye with Pepe Saya butter. It’s a great pairing because the martini is all about the olives, so it’s well matched to the saltiness of the cold cuts and the trout that we cure in-house.”

“Following the first course, we move into the sweeter side of the High Martini, with chocolate and cardamom tart, coconut and lime marshmallow, rose and raspberry macaron, spiced bread crème brûlée and kaffir lime cupcake – matched to Stillery’s Spring Splash Martini.”

The last course is a warm selection including a homemade waffle served with whipped cream and hazelnut cocoa spread, blueberry scones with clotted cream and local Malfroy’s honey, matched to an affogato espresso martini.
